Black Ivory Coffee is famous for its coffee which is made by feeding coffee cherry fruits to elephants.
Over the course of three days the coffee beans pass through the elephants’ digestive system; they are then picked out of its dung before being washed, dried and roasted.
During digestion, the enzymes of the elephant break down coffee protein. Since protein is one of the main factors responsible for bitterness in coffee, less protein means almost no bitterness.
As well, in contrast to carnivores, herbivores such as elephants use much more fermentation for digestion. Fermentation is desirable in coffee because it brings out the sugar in the bean and imparts the fruit from the coffee pulp into the bean.
The aroma of the coffee is floral and chocolate and it tastes like chocolate malt with a bit of cherry and there is no bitterness and it’s very smooth.
